Many people feel surprised as they begin to learn how much carbohydrate,
protein, and fat are really in various foods they love to eat. In this example,
we use excerpts from The 80/10/10 Success Guide to illustrate the great
disparity in fat content between two popular whole raw foods, almonds and kale.
All
numbers are for 100-gram (3.5-ounce) portions.

This means that 100 grams of almonds provide a whopping 422 calories from
fat!
In
contrast, the same mass, or weight, of kale
provides only 6 calories from fat.

The almonds provide more than 7300% as much
fat as the kale!
Also, the kale is 84% water (by weight), compared to just 5% for the almonds.
Since nearly all of our most important nutrients travel in water, eating foods
high in water (no dehydrates and minimal amounts of oils, nuts, seeds,
avocados, olives, and coconuts) is one of the most important keys to
high-performance living on a raw-food diet.
